Yummy but Healthy.. Sometimes just YUMMY!

CHILLI PUMPKIN SEEDS

I always threw the pumpkin seeds away, not realising that you can make them into a delicious and healthy snack, until I found this recipe. This is my favourite combination, but you can experiment with whatever spices you like.

Ingredients

1 pumpkin worth of seeds, washed and dried (Kent is best, but you can use any pumpkin)

1 tsp Fennel seeds

½ tsp chilli flakes

Pinch of salt

Approx. 2 tbsp olive oil

Method

Coarsely grind spices in a mortar and pestle, mix oil, seeds and spices together and spread in a single layer over a baking tray. Bake for 12 minutes at 200°C or until slightly crunchy. Cool on paper towel to keep the crunch.

Enjoy as a delicious, guilt-free snack.
